Plague Doctor Dark Roast was a blend we wanted to have the deepest body and heaviest aromas we could achieve in a coffee.  We roast this blend just dark enough to develop the body and sweetness combination we want but not dark enough to eliminate the origin flavors. We shoot for ripe berry, dark chocolate and maple syrup mouthfeel and sweetness. 

The green selections we use in this is often changing as this is a three part blend and not all components are available year round so we are constantly sample roasting and cupping to assure the alternating components maintain the heavy body, aroma and tasting notes we love in the Plague Doctor.  

How to Brew:  As always we never think there is a bad preparation to a coffee as long as the method is executed correctly, but we use this as our morning fix to bring us to life as thats what a Plague Doctor should be used for right? Although we are not sure how successful they were at that in the 14th century...
