This super sweet, high body and balanced acidity coffee is a single origin from the town of Santa Maria in the Huila department of Colombia, a town located not far from the departmental capital of Neiva. The coffees from this region tend to have bright, sweet flavors as seen in this offering in which we taste Apricot, Pear and Brown sugar that creates an aroma of apricot marmalade in the cup.

Process: Washed
How to Brew: Our favorite methods for brewing this hot is either through a Hario V60 at 22g of coffee to 360g of water or, as a full pot in our Technivorm Moccamaster at 55g of coffee and 907g of water (32oz). This also makes an amazingly sweet and syrupy cold brew that's hard to stop drinking.
